Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
In the same pan, add the remaining oil and sauté garlic for 30 seconds. Add the mixed vegetables and cook until tender.
Stir in the cooked rice, soy sauce, oyster sauce, black pepper, and red pepper flakes. Stir-fry for 3-5 minutes until everything is well combined.
Return the scrambled eggs to the pan, mix well, and drizzle with sesame oil. Garnish with green onions and serve hot!
