Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cherry tomatoes diced
  • 1/4 cup red onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp balsamic vinegar
  • 1/4 cup fresh basil chopped
  • 1/4 cup shredded mozzarella optional
  • Balsamic glaze for drizzling

Method
 

  1. Heat olive oil in a large skillet over medium heat. Season the chicken with Italian seasoning, salt, and black pepper. Sear for 5-6 minutes per side until golden brown and cooked through.
  2. In a bowl, mix cherry tomatoes, red onion, garlic, balsamic vinegar, and basil. Stir well and let sit for 5 minutes to absorb the flavors.
  3. If using mozzarella, sprinkle it over the chicken in the skillet and cover for 2 minutes until melted.
  4. Plate the chicken, spoon the bruschetta topping over each piece, and drizzle with balsamic glaze. Enjoy!
