Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a lightly greased wire rack.
In a shallow bowl, combine parmesan, breadcrumbs, garlic powder, onion powder, parsley, salt, and pepper.
Dip each piece of chicken into the beaten eggs, then coat thoroughly with the parmesan mixture. Press gently to help the coating stick.
Place the coated chicken pieces on the prepared baking sheet. Drizzle with olive oil or spray lightly with cooking spray. Bake for 22–25 minutes, flipping halfway, until golden and cooked through.
