baked goat cheese bruschetta dip recipe

Baked Goat Cheese Bruschetta Dip is the kind of appetizer that disappears almost as soon as it hits the table. With its creamy goat cheese base, warm tomato topping, and fresh basil finish, it’s a perfect blend of tangy, savory, and herbaceous. The goat cheese bakes to a luscious texture, while the topping becomes a savory, jammy burst of tomato flavor. It’s the perfect dish to scoop with crusty bread or crisp crackers. Whether you’re hosting a dinner party, attending a potluck, or just craving a cozy weekend treat, this baked dip is both easy to prepare and impressive to serve. It brings gourmet flair without the stress of complicated ingredients. You can prep it ahead of time and just pop it in the oven when guests arrive. It’s versatile enough to pair with a variety of dippers and makes a great vegetarian option for mixed gatherings. Once you try it, it’ll become a regular star on your appetizer menu.

Ingredients

  • 10 oz goat cheese log form
  • 1 1/2 cups cherry tomatoes halved
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • 1 teaspoon balsamic vinegar optional
  • 1 tablespoon fresh basil chopped
  • 1/4 teaspoon red pepper flakes optional
  • Toasted baguette slices or crackers for serving

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease a small baking dish or oven-safe skillet.
  2. Place the goat cheese in the center of the baking dish and slightly flatten it into a disk using a spoon or spatula.
  3. In a small bowl, mix cherry tomatoes with olive oil, garlic, salt, pepper, and red pepper flakes. Spoon the tomato mixture evenly over the goat cheese. Drizzle with balsamic vinegar if using.
  4. Bake in the preheated oven for 20–25 minutes, until the tomatoes are soft and bubbly and the goat cheese is warm and creamy.
  5. Remove from oven and top with fresh basil. Serve warm with toasted baguette slices or your favorite crackers.

Notes

  1. Refrigeration: Store leftovers in an airtight container for up to 3 days.
  2. Reheating: Warm in the oven at 350°F until heated through. Avoid microwaving to preserve texture.
  3. Freezing: Not recommended, as goat cheese and tomatoes may change in texture.
Make Ahead: Assemble the dish and refrigerate, then bake just before serving.
