  • 6 bone-in skin-on chicken thighs
  • 1/4 cup honey
  • Juice and zest of 2 limes
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon chili flakes optional
  • Salt and black pepper to taste
  • Fresh cilantro for garnish (optional)

Method
 

  1. In a medium bowl, whisk together honey, lime juice and zest, garlic, olive oil, soy sauce, and chili flakes. Taste and adjust seasoning as needed.
  2. Place the chicken thighs in a large zip-top bag or shallow dish. Pour the marinade over the chicken, coating well. Seal and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat the oven to 400°F (200°C). Arrange the marinated chicken thighs in a baking dish, skin side up. Spoon extra marinade over the top. Bake for 35–40 minutes, or until the internal temperature reaches 165°F and the skin is golden brown.
  4. Let the chicken rest for 5 minutes before serving. Garnish with fresh cilantro and a squeeze of lime, if desired.
