Method
- Preheat the oven to 375°F (190°C). Pat dry the mahi mahi fillets and rub them with olive oil, salt, pepper, garlic powder, and paprika.
- Place the fillets on a lined baking sheet with lemon slices on top. Bake for 18-20 minutes until flaky and cooked through.
- In a small bowl, mix chopped parsley, garlic, olive oil, lemon juice, salt, and pepper. Stir well.
- Drizzle the parsley sauce over the baked mahi mahi and serve with rice or roasted vegetables!

- Spicy Kick: Add red pepper flakes to the parsley sauce. 🌶️
- Citrus Twist: Use lime juice instead of lemon. 🍋
