  • 4 mahi mahi fillets
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1 lemon sliced
  • For the Parsley Sauce:
  • 1/2 cup fresh parsley chopped
  • 1 clove garlic minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the oven to 375°F (190°C). Pat dry the mahi mahi fillets and rub them with olive oil, salt, pepper, garlic powder, and paprika.
  2. Place the fillets on a lined baking sheet with lemon slices on top. Bake for 18-20 minutes until flaky and cooked through.
  3. In a small bowl, mix chopped parsley, garlic, olive oil, lemon juice, salt, and pepper. Stir well.
  4. Drizzle the parsley sauce over the baked mahi mahi and serve with rice or roasted vegetables!
