Ingredients
  

  • 3 –4 medium russet or Yukon gold potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika optional
  • ½ tsp dried thyme or rosemary
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese green onions, sour cream, bacon bits, chives

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Wash and dry the potatoes. Slice them into ¼-inch thick rounds. Try to keep them even for consistent cooking.
  3. In a large bowl, toss the potato slices with olive oil, garlic powder, paprika, herbs, salt, and pepper. Make sure every piece is well coated.
  4. Lay the slices in a single layer on the prepared baking sheet. Avoid overlapping so they crisp up nicely.
  5. Bake for 30–35 minutes, flipping once halfway through, until golden brown and crispy on the edges.
  6. If desired, sprinkle shredded cheese over the slices in the last 5 minutes of baking. Serve with sour cream, green onions, or bacon bits.

Notes

  • Refrigerator: Store in an airtight container for up to 3 days.
  • Reheat: Reheat in the oven or air fryer at 375°F to maintain crispness.
Freezing: Not recommended—potatoes tend to lose texture when frozen and reheated.
