Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or brown sugar
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup shredded or sliced mozzarella cheese
  • 1 cup cherry tomatoes halved
  • Fresh basil chopped (for garnish)
  • Optional: balsamic glaze for drizzling

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with foil.
  2. Season the chicken breasts on both sides with salt, pepper, garlic powder, and Italian seasoning.
  3. In a small bowl, whisk together the balsamic vinegar, honey (or brown sugar), and olive oil.
  4. Place the chicken breasts in the prepared baking dish. Pour the balsamic mixture over them, making sure they’re well coated.
  5. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove the dish from the oven and top each chicken breast with mozzarella and cherry tomatoes.
  7. Return to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, drizzle with extra balsamic glaze if desired, and sprinkle with fresh basil. Serve hot with your favorite sides.
