Ingredients
  

  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup milk
  • 4 strips bacon cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • Salsa or hot sauce optional

Method
 

  1. In a bowl, whisk eggs with milk, salt, and pepper. Heat butter in a pan over medium heat and cook the eggs, stirring until fluffy.
  2. In the same pan, sauté bell peppers, onions, and tomatoes until soft.
  3. Lay out the tortillas and evenly distribute the eggs, sautéed veggies, bacon, and cheese.
  4. Fold in the sides, roll tightly, and serve warm. Add salsa or hot sauce for extra flavor!
