Ingredients

  • 2 English muffins or bagels
  • 2 large eggs
  • 2 slices cheddar cheese
  • 4 strips crispy bacon or 2 sausage patties
  • 2 tbsp butter
  • 1 tbsp mayonnaise optional
  • ½ tsp salt
  • ½ tsp black pepper

Method

  1. Slice the English muffins or bagels in half and toast them in a skillet or toaster until golden brown. Spread butter or mayonnaise on each side for extra flavor.
  2. Heat a small pan over medium heat. Melt a little butter and crack in the eggs. Cook until the whites are set but the yolks are still slightly runny. Sprinkle with salt and pepper.
  3. Place a slice of cheese on the bottom half of the toasted bread. Add crispy bacon or a sausage patty, followed by the cooked egg. Top with the remaining half of the bread.
  4. For an extra gooey sandwich, place it back in the pan over low heat for 1-2 minutes to let the cheese melt. Serve immediately and enjoy!
