In a large mixing bowl, combine the ground pork with all the seasonings and maple syrup (if using). Mix well until fully incorporated.
Divide the mixture into 8 equal portions and shape them into small, round patties about ½-inch thick.
Heat olive oil in a large skillet over medium heat. Cook the patties for 5-6 minutes per side, or until they are golden brown and cooked through (internal temperature should reach 160°F/71°C).
Remove the patties from the skillet and let them rest for a minute. Serve them with eggs, toast, or in a breakfast sandwich!
