Ingredients
  

  • 1 20 oz package refrigerated cheese tortellini
  • 2 ½ cups marinara sauce
  • 1 cup ricotta cheese optional for creamier texture
  • 2 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: chopped parsley or basil for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. In a large bowl, combine the tortellini, marinara sauce, and ricotta (if using). Stir until well coated.
  3. Pour the mixture into the prepared baking dish. Top with mozzarella and parmesan cheeses. Sprinkle with Italian seasoning, and add salt and pepper if desired.
  4. Cover with foil and bake for 20 minutes. Remove the foil and bake for another 5–10 minutes, or until cheese is melted and lightly browned.
  5. Let it sit for a few minutes out of the oven. Sprinkle with fresh parsley or basil before serving, if desired.

  • Refrigerator: Store leftovers in an airtight container for up to 4 days.
  • Reheat: Microwave portions or warm in the oven at 350°F until heated through.
  • Freezing: Assemble unbaked, cover tightly, and freeze for up to 2 months. Bake from frozen, adding extra time.
