Ingredients

  • 2 cups cooked and shredded chicken
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • ¼ cup sour cream
  • 4 large flour tortillas

Method

  1. Heat olive oil in a skillet over medium heat. Add the shredded chicken, chili powder, cumin, garlic powder, onion powder, and salt. Stir well and cook for 3-4 minutes until heated through.
  2. Heat the tortillas in a dry skillet or microwave for a few seconds until warm and pliable. This helps prevent them from tearing when assembling the burritos.
  3. Place each tortilla on a flat surface. Add a layer of rice, black beans, seasoned chicken, shredded cheese, salsa, and sour cream. Be careful not to overfill.
  4. Fold in the sides of the tortilla, then roll it tightly from the bottom to create a burrito shape. Ensure the filling is secure inside.
