Ingredients
  

  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breast, thinly sliced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 small onion thinly sliced
  • 1 small green bell pepper thinly sliced
  • 1 small red bell pepper thinly sliced
  • 4 slices provolone cheese
  • 4 hoagie rolls sliced open
  • 1 tbsp butter melted

Method
 

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the thinly sliced chicken, salt, black pepper, garlic powder, and smoked paprika. Sauté for 5-6 minutes until the chicken is cooked through and slightly golden. Remove from the skillet and set aside.
  2. In the same skillet, add the remaining olive oil and sauté the onions and bell peppers for about 5 minutes until softened and slightly caramelized.
  3. Return the cooked chicken to the skillet, mixing it with the sautéed vegetables. Lower the heat and place slices of provolone cheese over the mixture. Cover the skillet for 1-2 minutes to let the cheese melt.
  4. Brush the inside of each hoagie roll with melted butter and lightly toast them on a skillet or in the oven. Spoon the cheesy chicken and vegetable mixture into the rolls. Serve hot and enjoy your Chicken Cheesesteak!

Notes

  • Refrigeration: Store leftover chicken mixture in an airtight container for up to 3 days.
  • Freezing: Freeze the cooked chicken and veggie mixture for up to 2 months. Thaw before reheating.
Reheating: Warm in a skillet over medium heat until heated through.
