Ingredients
  

  • 2 large apples Granny Smith or Honeycrisp work well
  • 1 cup soft caramels or caramel bits
  • 1 tbsp heavy cream optional, for thinning caramel
  • 1 cup semi-sweet or milk chocolate chips
  • ¼ cup chopped pecans toasted if desired
  • Optional toppings: sea salt flakes white chocolate drizzle, mini chocolate chips

Method
 

  1. Wash apples and pat dry completely. Slice into ¼ to ½-inch thick rounds. Use a small round cutter or knife to remove the core from the center of each slice. Lay slices flat on a parchment-lined tray.
  2. In a microwave-safe bowl, heat caramels with a splash of heavy cream (if using) in 30-second intervals, stirring between each, until smooth. Let cool slightly to thicken.
  3. Using a spoon or offset spatula, spread a layer of melted caramel over each apple slice. Place the tray in the refrigerator for 5–10 minutes to set the caramel.
  4. Melt chocolate chips in the microwave in 30-second bursts, stirring until smooth. Drizzle or spoon chocolate over the caramel-covered apple slices.
  5. Immediately sprinkle chopped pecans on top. Add any extra toppings like sea salt or white chocolate. Refrigerate until set, about 5–10 minutes more.

Notes

  • Refrigerator: Best served fresh, but can be stored in the fridge for up to 1 day in an airtight container.
  • Make-Ahead: Slice apples and soak in lemon water to prevent browning. Assemble just before serving.
