Ingredients
  

  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Blue food coloring gel recommended
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup semi-sweet chocolate chips
  • ½ cup white chocolate chips
  • ½ cup chopped chocolate chip cookies like Chips Ahoy or homemade
  • Optional: mini chocolate chip cookies or mini Oreos for topping

Method
 

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, then mix until smooth. Add blue food coloring a little at a time until you reach your desired shade.
  2. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
  3. Fold in the semi-sweet chocolate chips, white chocolate chips, and chopped cookies. If using, gently press a mini cookie into the top of each dough ball before baking for added flair.
  4. Scoop the dough into balls and place them on a parchment-lined baking sheet, spacing them a couple of inches apart. Bake for 9–11 minutes, until the edges are just set but the centers look slightly underbaked. Let cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

  • Room Temperature: Store in an airtight container for up to 4 days.
  • Freezing: Freeze baked cookies for up to 2 months. Thaw at room temperature.
Freezing Dough: Freeze the cookie dough balls and bake straight from frozen, adding an extra 1–2 minutes to the bake time.
