Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ cup brown sugar
  • 1 large egg
  • 1 cup milk 🥛
  • ¼ cup molasses 🍯
  • 2 tbsp melted butter 🧈
  • ½ tsp vanilla extract

Method

  1. In a large bowl, whisk together the flour, baking powder, ginger, cinnamon, nutmeg, and brown sugar. Set aside.
  2. In a separate bowl, whisk the egg, milk, molasses, melted butter, and vanilla extract until smooth and combined.
  3. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix — lumpy batter is perfect for fluffy waffles!
  4. Preheat your waffle iron and lightly grease it with non-stick spray or butter. Pour the batter onto the iron, close, and cook according to the manufacturer’s instructions, usually about 4-5 minutes. Once golden brown, serve with your favorite toppings! 🍓

Notes

  • Vegan Option: Substitute the egg with a flax egg and use a plant-based milk (like almond or oat milk).
  • Spicy Kick: Add a pinch of cayenne pepper for an extra zing! 🌶️
  • Toppings: Try serving with whipped cream, caramelized bananas 🍌, or a dusting of powdered sugar. 🎉
