Ingredients
  

  • For the Chicken Marinade:
  • 2 large chicken breasts sliced thin
  • 3 tbsp Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber grated and drained
  • 2 garlic cloves minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill or parsley chopped
  • Salt to taste
  • For Assembling the Gyros:
  • 4 pita breads
  • 1/2 red onion sliced
  • 1 tomato diced
  • 1/2 cucumber sliced
  • Lettuce optional
  • Feta cheese optional

Method
 

  1. In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add the sliced chicken, coat well, and refrigerate for at least 1 hour (or overnight for maximum flavor).
  2. Grate the cucumber and squeeze out excess moisture. In a bowl, mix Greek yogurt, cucumber, garlic, lemon juice, olive oil, dill, and salt. Stir well and refrigerate until ready to use.
  3. Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 4-5 minutes per side until golden brown and fully cooked. Remove from heat and let it rest for a few minutes.
  4. Warm the pita bread, then layer with lettuce, cooked chicken, red onion, tomato, cucumber, and tzatziki sauce. Sprinkle with feta cheese if desired. Wrap and serve immediately.

  • Refrigeration: Store leftover chicken and tzatziki in separate airtight containers for up to 3 days.
  • Freezing: Freeze marinated raw chicken for up to 3 months.
