In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease. Add mushrooms, onion, and garlic, and sauté until softened. Season with salt, pepper, and Italian seasoning.
Stir in the cream of mushroom soup and sour cream until well combined. Cook for 2 minutes, then remove from heat.
Preheat oven to 375°F (190°C). Spread the beef mixture into a greased baking dish. Sprinkle shredded cheddar cheese evenly over the top.
Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly. Let it rest for 5 minutes before serving.
