Ingredients
  

  • 2 cups vanilla ice cream or your favorite flavor
  • 2 cups chocolate chips dark, milk, or white
  • 2 tablespoons coconut oil for a smooth coating
  • ½ cup crushed nuts sprinkles, or cookie crumbs (optional)
  • 6 popsicle sticks

Method
 

  1. Scoop the ice cream into a rectangular mold or spread it in a shallow dish. Insert popsicle sticks into each portion and freeze for at least 2 hours until firm.
  2. In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second intervals, stirring in between until smooth.
  3. Remove the frozen bars from the mold and quickly dip each one into the melted chocolate. Let the excess drip off, then immediately sprinkle with nuts, sprinkles, or cookie crumbs if desired.
  4. Place the coated bars on a parchment-lined tray and freeze for another 2 hours to set. Serve straight from the freezer and enjoy.

Notes

  • Freezing: Store in an airtight container in the freezer for up to 2 weeks.
  • Best Served: Let sit at room temperature for 1-2 minutes before eating for the best texture.
