Ingredients
  

  • ¾ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 3 oz box Jello (any flavor) – use more for multiple colors
  • Optional: additional Jello powder or sprinkles for rolling

Method
 

  1. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
  2. In a separate bowl, whisk together flour, baking powder, salt, and the Jello powder. Slowly add the dry ingredients to the wet mixture, stirring until a dough forms.
  3. Wrap the dough in plastic wrap and chill for about 30 minutes. This helps the cookies hold their shape while baking.
  4. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop out dough and roll into 1-inch balls. If desired, roll each ball in extra Jello powder or sprinkles. Place on the baking sheet 2 inches apart and flatten slightly with the bottom of a glass.
  5. Bake for 10–12 minutes, just until edges are set. Let cool on the pan for 5 minutes before transferring to a wire rack

Notes

  • Room Temperature: Store in an airtight container for up to 5 days.
  • Freezing Dough: Wrap and freeze for up to 2 months. Thaw in fridge before baking.
Freezing Baked Cookies: Freeze cooled cookies in a sealed container with parchment between layers.
