Method
- Heat olive oil in a pan over medium heat. Add the corn and cook until slightly charred, about 5-7 minutes. Remove from heat.
- In a large bowl, combine mayonnaise, sour cream, chili powder, smoked paprika, diced jalapeño, garlic, lime juice, and half of the cotija cheese.
- Stir in the roasted corn and mix well. Add salt and pepper to taste.
- Top with the remaining cotija cheese, fresh cilantro, and an extra sprinkle of chili powder. Serve warm or at room temperature with tortilla chips!
