Ingredients
  

  • 3 cups corn fresh, frozen, or canned
  • 1 tbsp olive oil
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese or feta, crumbled
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 jalapeño diced
  • 1 clove garlic minced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a pan over medium heat. Add the corn and cook until slightly charred, about 5-7 minutes. Remove from heat.
  2. In a large bowl, combine mayonnaise, sour cream, chili powder, smoked paprika, diced jalapeño, garlic, lime juice, and half of the cotija cheese.
  3. Stir in the roasted corn and mix well. Add salt and pepper to taste.
  4. Top with the remaining cotija cheese, fresh cilantro, and an extra sprinkle of chili powder. Serve warm or at room temperature with tortilla chips!
