  • 2 cups sliced mushrooms button or cremini
  • 1 ½ cups cooked rice
  • 1 cup shredded mozzarella cheese
  • ½ cup Parmesan cheese
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup bread crumbs or crushed crackers for topping

Method
 

  1. Preheat your oven to 375°F. In a skillet, cook the sliced mushrooms over medium heat until they release moisture and become tender, about 5 minutes.
  2. In a large bowl, combine the cooked mushrooms, rice, shredded mozzarella, Parmesan, cream of mushroom soup, milk, and seasonings. Stir well to blend the flavors.
  3. Pour the mixture into a greased baking dish, spreading it evenly. Sprinkle bread crumbs or crushed crackers on top for a crispy crust.
  4. Bake for 25-30 minutes or until the casserole is bubbly and the topping is golden brown. Broil for 2 minutes at the end for extra crispiness.
