  • 1 cup old-fashioned oats
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped apple Granny Smith or Honeycrisp

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This prevents sticking and ensures even baking.
  2. In a bowl, whisk together the flour, oats, baking soda, cinnamon, and salt. This helps distribute the spices evenly.
  3. In a separate bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy. Mix in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped apples to add natural sweetness and moisture.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet. Bake for 10–12 minutes, or until the edges are golden brown. Let cool before serving!
