Preheat oven to 400°F (200°C). Lightly grease a baking dish or line with parchment paper.
In one shallow bowl, combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. In another, beat the egg.
Dip each chicken breast in the egg, then dredge in the breadcrumb mixture, pressing lightly so it sticks. Place in the prepared baking dish.
Drizzle olive oil over the top of the chicken to help with browning. Bake for 25–30 minutes, or until the chicken is cooked through and golden.
Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.
