Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • ½ cup water
  • 1 cup cooked white or Mexican rice
  • 1 cup canned refried beans or black beans
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas burrito size
  • ¼ cup sour cream optional
  • ¼ cup salsa or enchilada sauce optional
  • Olive oil or butter for grilling
  • Optional toppings: shredded lettuce diced tomatoes, guacamole, hot sauce

Method
 

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and ½ cup water. Simmer for 5 minutes until thickened.
  2. Warm the rice and beans if needed. Lay out each tortilla and layer with a scoop of beef, rice, beans, and a generous sprinkle of cheese. Add sour cream or salsa, if using.
  3. Fold in the sides and roll tightly from one end to the other. Place seam-side down.
  4. Option 1 – Grill: Heat a skillet with a little oil or butter over medium heat. Grill each burrito 2–3 minutes per side until golden and crisp.
  5. Option 2 – Bake: Place burritos in a baking dish, top with more cheese or enchilada sauce if desired, and bake at 375°F (190°C) for 15–20 minutes.
  6. Serve hot with your favorite toppings or dipping sauces.

Notes

  • Refrigerator: Wrap in foil or plastic and refrigerate up to 3 days.
  • Freezing: Wrap individually in foil, freeze for up to 2 months.
