Ingredients
  

  • 1 lb breakfast sausage pork or turkey 🥓
  • 6 large eggs 🍳
  • 2 cups milk or half & half 🥛
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika 🌶️
  • 4 cups frozen hash browns thawed 🥔
  • 1 ½ cups shredded cheddar cheese 🧀
  • ½ cup shredded mozzarella cheese
  • ½ cup diced bell peppers red & green for a festive touch! 🎄
  • ½ cup diced onions 🧅

Method
 

  1. In a skillet over medium heat, cook the sausage until browned. Drain any excess grease and set aside.
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika.
  3. Grease a 9x13-inch baking dish. Spread the hash browns evenly, followed by the cooked sausage, bell peppers, and onions. Sprinkle cheddar and mozzarella cheese on top. Pour the egg mixture over everything, making sure it’s evenly distributed.
  4. Preheat the oven to 375°F (190°C) and bake for 40-45 minutes, or until the eggs are set and the top is golden brown. Let it cool slightly before slicing and serving.

  • Refrigeration: Store leftovers in an airtight container for up to 4 days.
  • Reheating: Warm in the microwave or oven until heated through.
