Ingredients
  

  • 8 large eggs 🍳
  • 1 cup cottage cheese 🧀
  • ½ cup shredded cheddar cheese
  • ½ cup milk or heavy cream 🥛
  • 1 tsp baking powder for extra fluffiness!
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder optional
  • ½ cup diced bell peppers 🌶️
  • ½ cup chopped spinach 🌿
  • 4 strips cooked bacon crumbled (or cooked sausage) 🥓

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together the eggs, cottage cheese, shredded cheese, milk, baking powder, salt, pepper, and garlic powder.
  3. Stir in the bell peppers, spinach, and crumbled bacon or sausage. Mix until everything is evenly distributed.
  4. Pour the mixture into the prepared baking dish and bake for 30 minutes, or until the eggs are set and the top is slightly golden. Let it cool for a few minutes before slicing and serving.

Notes

  • Refrigeration: Store leftovers in an airtight container for up to 4 days.
