Ingredients
  

  • For the Dough:
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold, cubed
  • 1/3 cup ice-cold water
  • For the Filling:
  • 2 cups fruit filling apple, peach, cherry, or your favorite
  • 1/4 cup sugar adjust based on fruit sweetness
  • 1/2 tsp cinnamon optional
  • 1 tsp lemon juice
  • For Frying:
  • 2 cups vegetable oil

Method
 

  1. In a bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Slowly add ice water and mix until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  2. In a saucepan over medium heat, combine fruit, sugar, cinnamon, and lemon juice. Cook for 5-7 minutes until slightly thickened. Let it cool.
  3. Roll out the dough on a floured surface and cut into 5-inch circles. Spoon 1-2 tablespoons of filling onto one side of each circle. Fold over and crimp the edges with a fork to seal.
  4. Heat oil in a deep pan to 350°F (175°C). Fry the pies in batches for 2-3 minutes per side until golden brown. Drain on paper towels and serve warm.

Notes

  • Refrigeration: Store in an airtight container for up to 3 days.
  • Freezing: Freeze uncooked pies for up to 2 months and fry when ready.
Reheating: Warm in the oven at 350°F (175°C) for 5-7 minutes.
