  • For the Crust:
  • 2 cups crushed Golden Oreos
  • ½ cup unsalted butter melted
  • For the Cheesecake Filling:
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • For the Strawberry Crunch Topping:
  • 1 cup crushed Golden Oreos
  • ½ cup freeze-dried strawberries crushed
  • 3 tablespoons unsalted butter melted

Method
 

  1. In a bowl, mix crushed Golden Oreos with melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate for at least 10 minutes while preparing the filling.
  2. In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  3. Spread the cheesecake filling evenly over the prepared crust. Smooth the top with a spatula.
  4. In a bowl, mix crushed Golden Oreos, freeze-dried strawberries, and melted butter until crumbly. Sprinkle this mixture evenly over the cheesecake.
  5. Cover and refrigerate for at least 4 hours, or overnight, to allow the cheesecake to set properly. Once set, slice and enjoy!
