Ingredients
  

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup buttermilk
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp melted butter
  • ¼ cup mini chocolate chips optional
  • Maple syrup powdered sugar, or fruit for topping

Method
 

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, mix the buttermilk, egg, vanilla extract, and melted butter. Slowly add the wet ingredients to the dry, stirring until just combined.
  2. If using chocolate chips or fruit, gently fold them into the batter, ensuring they are evenly distributed.
  3. Heat a greased mini muffin pan or a cake pop maker. Fill each mold with batter, about ¾ full. Cook for 3-4 minutes per side until golden brown and puffed up.
  4. Remove from heat, let cool slightly, and serve with maple syrup, powdered sugar, or fresh fruit. Enjoy your bite-sized pancake treats!
