Pecan Pie Cobbler

Pecan Pie Cobbler is everything you love about traditional pecan pie but taken to a whole new level of indulgence. With layers of buttery cobbler dough, a sticky brown sugar filling, and a generous topping of crunchy pecans, this dessert is sweet, gooey, and comforting. As it bakes, the magic happens—the rich filling thickens into a caramel-like sauce, the crust turns golden and slightly crisp, and the pecans toast to perfection. This is the kind of dessert that fills your kitchen with the warm scent of brown sugar and toasted nuts. It’s perfect for fall and holiday gatherings, but honestly, it’s delicious year-round. Serve it warm with a scoop of vanilla ice cream and you’ll see why this cobbler is often more requested than the pie it was inspired by. It’s rustic, rich, and always a crowd-pleaser

Ingredients

  • 1/2 cup unsalted butter 1 stick, melted
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups packed brown sugar
  • 1 1/2 cups boiling water
  • 1 1/2 cups chopped pecans

Method

  1. Preheat oven to 350°F (175°C). Pour the melted butter into the bottom of a 9x13-inch baking dish. In a separate bowl, whisk together the flour, baking powder, salt, granulated sugar, milk, and vanilla extract until smooth. Pour the batter over the melted butter—do not stir.
  2. Sprinkle the brown sugar evenly over the batter. Then, scatter the chopped pecans over the top. Again, do not mix—this layering is what gives the cobbler its gooey filling and crisp top.
  3. Carefully pour the boiling water over the entire dish. This might seem strange, but it’s key to creating that caramel-like sauce as the cobbler bakes. Don’t stir.
  4. Place the baking dish in the preheated oven and bake for 40–45 minutes, or until the top is golden brown and set. The bottom will be soft and gooey. Let cool slightly before serving.
