Ingredients
  

  • 4 bone-in pork chops 1-inch thick
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice

Method
 

  1. Pat the pork chops dry with a paper towel to ensure they sear properly. Season both sides generously with salt, pepper, and dried thyme. Let them sit at room temperature for a few minutes.
  2. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Once the oil is hot and the butter has melted, add the pork chops to the pan. Sear the chops for about 4-5 minutes per side, or until they are golden brown and cooked through, reaching an internal temperature of 145°F (63°C).
  3. Once the pork chops are done, remove them from the skillet and set them aside on a plate. In the same skillet, add 2 minced garlic cloves and cook for about 30 seconds until fragrant.
  4. Place the cooked pork chops back into the skillet with the sauce. Spoon the sauce over the pork chops and let them simmer for an additional 2-3 minutes, allowing the pork to absorb the flavors.

Notes

  • Bone-In vs. Boneless: Bone-in pork chops are ideal for this recipe as the bone helps retain moisture, keeping the meat juicy. However, you can use boneless chops if preferred.
  • Resting Time: After cooking, let the pork chops rest for a few minutes before serving to allow the juices to redistribute and ensure tenderness.
  • Internal Temperature: Always check the internal temperature of your pork chops. For best results, cook them to 145°F (63°C) and let them rest before serving.
