Ingredients
  

  • 1 cup fresh strawberries hulled and chopped
  • 1 cup milk dairy or non-dairy
  • 3 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • Optional toppings: sliced strawberries nuts, shredded coconut

Method
 

  1. In a blender, combine fresh strawberries, milk, honey (or maple syrup), and vanilla extract. Blend until smooth.
  2. Pour the strawberry mixture into a bowl or jar. Add chia seeds and stir well to combine.
  3. Cover and refrigerate for at least 2 hours (or overnight). Stir once after 30 minutes to prevent clumping.
  4. Once the pudding has thickened, give it a final stir, top with fresh strawberries or nuts, and enjoy!
