  • 4 cups frozen tater tots
  • 6 large eggs
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon chopped
  • ½ cup cooked sausage crumbled
  • ¼ cup green onions chopped
  • ¼ cup sour cream (for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Spread frozen tater tots on a baking sheet in a single layer and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  2. In a bowl, whisk together eggs, milk, salt, and black pepper. Heat a non-stick skillet over medium heat and scramble the eggs until fluffy and fully cooked. Remove from heat.
  3. Divide crispy tater tots between serving bowls. Top with scrambled eggs, shredded cheddar cheese, cooked bacon, and crumbled sausage.
  4. Sprinkle green onions on top and drizzle with sour cream. Serve immediately while warm and enjoy!
